This blog is about cooking and baking with Will.

When Will was 4 months old we discovered that he was allergic to cow’s milk, tree nuts, peanuts and eggs. It was then that our journey began. Have you ever read the packaging before purchasing a loaf of bread? Have you ever thought about what it would be like to not put cream in your coffee, cook without butter or bake a cake without eggs? Did you know that hot dogs contain milk? Did you know that Oreos do not? If you answered no, then you are NOT alone. As parents, we have had to reinvent the way we purchase and cook everything that Will consumes. As eaters, we were what is best described as non-vegetarian, occasionally unhealthy mainstreamists. We spent countless hours on research and when this all started we were babes in the woods…. Alone. But then, as we learned more, there was a bit of light at the end of the tunnel… cow’s milk and eggs are not very good for you and there are substitutes. Organic Soy; Nutritional Yeast; Tofu… But what are these things? Where do you buy them? What do they look like? and then – WHAT DO YOU MAKE WITH THEM?

But THAT is NOT ALL….

At the time of publishing this, Will is 2 years old and LOVES to cook. He loves to stand at the counter and watch, stir, sift and taste. When we realized this hobby, of sorts, we felt impassioned to bake and cook as often as possible. Unfortunately, once we got into things, all of the dairy and egg free recipes seemed to be lacking in accuracy… So we started coming up with our own… Which we’ve tested, tried and critiqued… We can’t promise that you’ll agree, but so far we think we’re pretty smart. Will is also a typical 2 year old and is rather finicky about what he eats, so he isn’t always into trying what we make… But how do you cook safely with a 2 year old? Or any child?

So here’s how it’s going to work. We will make something and if we find ourselves enjoying it, we will write about it, take pictures and then describe the uncommon ingredients and the acutriments needed as we go along our way.

Inspired by Will, we hope to enlighten, entertain, share and nourish as our dairy, egg and nut free experience continues.
